Originating from Shanghai, China back in 1871 during the Qing Dynasty, the iconic Shanghainese xiao long bao (literally meaning ‘little basket bun’) is well-known for its mouth-watering meat filling and piping hot soup encased in each little dumpling.
Each xiao long bao at Dragon-i is prepared according to the following strict standards:
- Each dumpling must have 18 close-folding plaits bound neatly to ensure a smooth texture;
- Each dumpling must weigh between 29g to 30g and be of a standard height;
- The outer surface layer must have a diameter of 6.5cm; and
- Each xiao long bao chef must be able to wrap eight dumplings within a minute.

- 以笼的传人的标准打18褶,褶数精密,收口漂亮,纹理有致。
- 每个小笼包都经过秤重,标准重量介于29至30克之间,且高低大小必须一致。
- 小笼包的外皮标准直径为6点5公分。
- 师傅每分钟以包8个小笼包为速度指标。
